Chef's Knife

What you'll make

A working chef's knife. High-carbon steel blade, properly heat-treated for hardness and toughness, fitted handle scales in wood or micarta, sharpened to a working edge. Real cutlery, made over multiple sessions because no kitchen knife worth using gets made in an afternoon.

I forge the knife across multiple sessions. You can come watch any or all of them. Final piece delivered finished — sharpened, handled, sheathed.

Assist

You handle some of the forging and finishing under my direction. I handle the heat treatment, grinding, and final edge.

Lead

You forge the blade, grind the geometry, fit the handle, and sharpen the edge. I coach through every step. The knife is yours, made by your hands. Closer to the One-Day Viking Knife class but with a more refined chef's profile and finer finishing.

Where it happens

The forge comes to you. Backyards, AirBnB driveways, brewery yards, ranch properties, parks — anywhere with about 16x13 of outdoor space and 15 feet of clearance from buildings. Travel within 15 miles of Greeley included; further distances quoted by trip. Shipping at customer cost; local delivery within 15 miles included.

Home cooks who want one good knife instead of a block full of mediocre ones. People who already understand why a hand-forged knife is different. Gift commissions for serious home chefs. Anyone considering deeper bladesmithing instruction — this is a good first taste of real knife work.

Logistics

8–12 hours of work, split across 2–3 sessions over 4–8 weeks. Ages 16+ for Lead role only. Closed-toe shoes, natural fibers, sustained focus required for Lead participants.
